Celebrated butchers Erika Nakamura and Jocelyn Guest join the Big Apple Barbecue lineup for the first time. The culinary duo are best known for White Gold Butchers, a hugely popular full-service, whole animal butcher shop and seasonal eatery on the Upper West Side of Manhattan. Nakamura and Guest teamed up with chef April Bloomfield to open White Gold Butchers in October 2016 and recently left to pursue their own venture.
Prior to opening White Gold, Nakamura cut her teeth at Fliesher’s Grass-Fed Organic Meats, Lindy & Grundy’s Meats, and The Breslin while Guest put in work at Lindy & Grundy’s Meats, Dickson’s Farmstand Meats, and Salvation Burger. Born and raised in Tokyo, Nakamura moved to the Upper West Side, finished high school and college and enrolled at The French Culinary Institute (now The International Culinary Center) and worked in some of the city’s top kitchens. Guest grew up a SPAM-eating Army brat and moved every summer until she was 13, and spent her days as a comedy writer before finding her true calling of butchering.
